During the Mughal Empire, the reign of Emperor Shah Jahan is widely regarded as the pinnacle of artistic and cultural refinement. In those years, “Miyaji” the cook rose to extraordinary fame and became known as the Emperor’s personal chef at the royal court. Miyaji was a master in preparing some of the era’s most distinctive and flavorful Mughal dishes. His creations—Dum Biryani, Qorma, Roomali Roti, and soft kebabs—were among the most celebrated items served at the imperial table. The cuisine crafted by Mian Ji earned special recognition throughout the Mughal period for its aroma, taste, and delicacy.
